Ingredients

For the Cake:
220 g Gluten-free plain flour
200 g Caster sugar golden
200 g Butter
2 tsp Baking powder
2 Oranges large, juiced then peeled and chopped
4 Large eggs
For the Drizzle Syrup:
2 Oranges juiced and zested
to taste Ground Cinnamon
275 g Granulated sugar
500 ml Water

This Gluten Free Orange Drizzle Cake is wonderful for the tastebuds and the food restrictions. Made with gluten free plain flour, you won’t even notice the difference. I add 4 eggs to my batter to create a more dense and moist cake. The drizzle syrup drowning the cake is made from orange juice, orange zest, ground cinnamon and sugar water.

Steps to make Gluten Free Orange Drizzle Cake

Prepare syrup

In a saucepan, combine 275 g of granulated sugar, the juice and zest from 2 oranges, 500 ml of water. Slowly simmer until sugar has completely dissolved.

Add cinnamon

Stir in cinnamon, to your taste then increase the heat to a boil and once boiling, reduce the heat immediately. Stir gently until a syrup forms.

Preheat oven and prepare baking pan

Preheat the oven to 180 °C and grease a 20 cm cake pan and line with baking parchment paper.

Combine butter and sugar

In a mixing bowl, combine 200 g of butter and 200 g of caster sugar until creamy, light and fluffy.

Add flour and baking powder

Sieve 220 g of gluten free plain flour and 2 teaspoons of baking powder and mix to combine.

Add eggs

Beat in 4 eggs until everything is well combined into a batter.

Add flavor

Stir in the juice and chopped zest pieces from 2 large oranges.

Bake

Transfer the batter to the prepared cake pan and bake in the preheated oven for about 25 minutes until golden brown.

Drizzle cake

Cool on a wire rack placed on top of a baking sheet, to catch any drizzle drippings. Drizzle the prepared orange and cinnamon drizzle over the cake while it is still warm.

Cool completely before slicing and serving. Enjoy!
