If you are looking for another homey soup recipe, this Loaded Baked Potato Soup fits the bill. Thick, creamy, and a little chunky, this delicious soup has all the good stuff we love on a potato – including cheese and bacon. To make this soup, melt the unsalted butter first, then add the diced onion and sauté until soft. Add in the garlic and cook until fragrant. Next, whisk in the flour and cook until the flour turns golden brown. Gradually whisk in the milk and cream and cook until slightly thickened. Now, whisk in the broth and add in the potatoes. Cook the potatoes in the broth until tender. In the meantime, cook the bacon until crisp and crunchy. Finally, stir in the sour cream, Cheddar cheese, and bacon and season with salt and black pepper to taste. For extra richness, serve with more cheese and bacon on top. Finish with a sprinkle of minced chives and enjoy!

Add flour

2

Whisk in ⅓ cup all-purpose flour and cook until golden, stirring, about 2 minutes.

Gradually pour in 2 cups chicken or vegetable broth and whisk until combined.

6

Add potatoes

2

Add in the potatoes and bring the soup to a simmer (don't boil).

Simmer

15

Reduce heat to low and simmer, stirring often to prevent the bottom from burning, until the potatoes are tender, about 15-20 minutes.
