Microwave Egg Mug Muffin
Breakfast will never be the same once you have tried my Microwave Egg Mug Muffin. This is a healthy savory breakfast which you can make and eat in around 10 minutes. Perfect as it is or served with hot buttered toast on the side.
Start this mug muffin by making a batter from flour, baking powder, baking soda and salt. Add milk, oil, egg, cheese and scallions and mix. Crack a small egg into a well in the center of the batter and spoon the batter from the sides of the mug over the top of the egg. This is quite tricky but it’s important so that the egg doesn’t explode while cooking. The batter forms a protective layer. Microwave for about a minute and voila! Delicious breakfast in minutes.
