2 tbsp Milk
2 tsp Vegetable oil or melted butter
2 tbsp Eggs
1 tbsp Cheddar cheese grated
1 tbsp Scallions chopped
1 Eggs small

Breakfast will never be the same once you have tried my Microwave Egg Mug Muffin. This is a healthy savory breakfast which you can make and eat in around 10 minutes. Perfect as it is or served with hot buttered toast on the side.

Start this mug muffin by making a batter from flour, baking powder, baking soda and salt. Add milk, oil, egg, cheese and scallions and mix. Crack a small egg into a well in the center of the batter and spoon the batter from the sides of the mug over the top of the egg. This is quite tricky but it’s important so that the egg doesn’t explode while cooking. The batter forms a protective layer. Microwave for about a minute and voila! Delicious breakfast in minutes.

Steps to make Microwave Egg Mug Muffin


Make the batter


Place 5 tablespoons of all-purpose flour, ¼ teaspoon of baking powder, ⅛ teaspoon of baking soda and ⅛ teaspoon of salt in a large microwave-safe mug. Mix well until fully combined.


Add fillings


Stir in 2 tablespoons of milk, 2 teaspoons of oil or melted butter, 2 tablespoons of egg,1 tablespoon of grated Cheddar cheese, and 1 tablespoon of chopped scallions. Continue to mix until just combined.


Add egg


Use a spoon to make a well in the center of the batter. Add 1 small egg to the well. Spoon batter from the sides over the egg until it is completely covered.


Cook in the microwave


Cook in the microwave until the mug muffin is firm on top. This can take between 50 seconds and 1 minute 10 seconds depending on your microwave.



Leave to cool for a couple of minutes and serve with some hot buttered toast.
