For the brownies:
1 box Brownie mix
2 Large eggs
½ cup Vegetable oil
¼ cup Baileys Original Irish Cream
Cooking spray
For the frosting:
½ cup (1 stick) Butter softened
3 cups Powdered sugar divided
¼ cup Baileys Original Irish Cream
½ tsp Peppermint extract
pinch Kosher Salt
green Food coloring
½ cup Chocolate chips melted

I love to make these Mint Irish Cream Brownies each year for St Patrick’s Day. They taste delicious with a combination of Baileys, mint and topped with a green frosting! I love the combination of moist, chocolatey brownies with coffee flavored Baileys and a hint of mint. 

Start by whisking brownie mix, eggs, oil, and Baileys together. Bake the batter in a preheated oven for 30 minutes. Make the frosting by beating butter until light and fluffy with powdered sugar until smooth. Add Baileys, mint extract, and a pinch of salt. Tint the frosting with a few drops of green food coloring and spread on top of the brownies.

Steps to make Mint Irish Cream Brownies

Heat the oven and prepare a pan

Preheat the oven to 350 °F. Grease a 9x9 inch baking pan with cooking spray and line it with parchment paper.

Make brownie mixture

Whisk a box of brownie mix, 2 eggs, ½ a cup of oil and ½ a cup of Baileys.

Put the brownie mixture in the baking pan

Pour the brownie batter into the prepared baking pan.

Bake

Bake for about 30 minutes. Remove from the oven when a toothpick inserted comes out with some moist crumbs.

Leave to cool

Leave the brownies to cool in the pan.

Make the frosting

Beat ½ cup of butter using a handheld mixer until light and fluffy. Add 2 cups of powdered sugar and beat until smooth, light and fluffy. Add ¼ cup of Baileys, ½ a teaspoon of mint extract, and a pinch of salt. Beat the ingredients until fully combined.

Add sugar and green food coloring

Add the remaining cup of powdered sugar and a few drops of green food coloring and beat until you have a smooth green frosting.

Frost the brownies

Once the brownies have cooled, spread the frosting on top and drizzle with melted chocolate.
