Mint Irish Cream Brownies
I love to make these Mint Irish Cream Brownies each year for St Patrick’s Day. They taste delicious with a combination of Baileys, mint and topped with a green frosting! I love the combination of moist, chocolatey brownies with coffee flavored Baileys and a hint of mint.
Start by whisking brownie mix, eggs, oil, and Baileys together. Bake the batter in a preheated oven for 30 minutes. Make the frosting by beating butter until light and fluffy with powdered sugar until smooth. Add Baileys, mint extract, and a pinch of salt. Tint the frosting with a few drops of green food coloring and spread on top of the brownies.

I made these for my husband and he loved the minty taste, he did mention that they were a little bit bland and needed more sugar added though.
Was very good with some bland tea, I used brown sugar instead of powdered and it tasted better than store bought.
I made this on St. pattys day and liked it more than I imagined I would, usually I avoid minty cakes and stick with things like the chocolate coffee cake, but this was worth stepping out of my comfort zone
Making this for a co-workers birthday and already tried one, really tasty and the mint isn't too strong so it's the perfect dessert.
Not only is this dessert beautiful to look at but it taste just as it looks, like heaven!
These have a very rich taste but every time I tried making them they turned out to be quite dry.
Wish I was better at designing cakes because the swirls turned into big dots of chocolate but doesn't matter because they all ended up in my tummy either way!
I absolutely love brownies and these are on my list! There is a small issue though, Bailey's is not available where I live so I used a different cream.
