2 ½ cups All-purpose flour
1 tsp Salt
green Food coloring
Green colored sugar optional
Instant Royal Icing green, optional

Shamrock Cookies

Shamrock Cookies are delicious peppermint green cookies which are perfect for St Patrick’s Day. As we all know, the shamrock is a symbol of Ireland. Shamrock is  recognizable due to its appearance – 3 heart shaped leaves and the plant is linked to Ireland’s patron saint, St Patrick. 

These St Patrick’s Day cookies are pretty simple to make too. Start by making cookie dough from by creaming shortening and confectioners sugar until it is light and fluffy. Beat in egg and extract and add flour and salt gradually. A few drops of green food coloring will give the cookie dough a pale green color. 

To make Shamrock Cookies, you will need the following ingredients:

Steps to make Shamrock Cookies

Cream sugar and shortening

Beat 1 cup of shortening and 1 cup of confectioners sugar with a handheld electric mixer until light and fluffy.

Add egg and extract

Beat in one egg and 1 teaspoon of peppermint extract.

Mix in flour and salt

Mix in 2 ½ cups of flour and 1 teaspoon of salt gradually. Add a few drops of green food coloring for a minty green color.

Chill dough

Cover and chill the cookie dough for 1 hour in the refrigerator until firm.

Heat the oven

Preheat the oven to 375 °F.

Cut out cookies

Roll out the cookie dough to ¼ inch thickness. Using a sharp knife or a shamrock-shaped cookie cutter, cut out cookies.

Sprinkle with sugar

Sprinkle the cookies with green colored sugar.

Bake

Place the cookies on ungreased baking sheets and bake the cookies in the oven for 10-12 minutes until the edges of the cookies are light golden brown.

Cool

Allow the cookies to cool on the baking sheets for about 1 minute before moving the cookies to a wire rack to cool completely.

PREPARE ICING

Cook the Icing according to the instructions on the package.

TOP COOKIES

Using a piping bag, drizzle prepared icing over the cookies.

Serve

Allow icing to set and harden and serve with mugs of tea or coffee!
