1 box Chocolate cake mix plus ingredients called for on box
For the filling
1 (14oz) can Condensed milk sweetened
⅓ cup Heavy cream
⅓ cup Cocoa powder
¼ cup Baileys
For the frosting
1 cup Butter softened
5 cups Powdered sugar divided
½ cup Chocolate curls baileys
¼ cup Cocoa powder
1 tsp Vanilla
½ tsp Salt
Chocolate curls for garnish

This Baileys Poke Cake is a great way to use up that bottle of Baileys that has been hanging around since Christmas! As you’re probably aware, Baileys is an Irish alcoholic beverage which is flavored with cream, cocoa, and Irish whiskey. It is a perfect cake to make for St Patrick’s Day due to its Irish connection! 

This cake is really easy to make too because it uses a box chocolate cake mix. While the cake bakes, make a filling from sweetened condensed milk, heavy cream, cocoa powder, and Baileys. When the cake cools slightly, poke holes all over using the handle of a wooden spoon. Pour over the filling and refrigerate before frosting with a Baileys, cocoa powder, vanilla, salt and sugar frosting.

Steps to make Baileys Poke Cake

Heat the oven and prepare a baking pan

Preheat the oven to 350 °F. Line a 9×13 inch baking pan with parchment paper and lightly spray with cooking spray.

Mix the cake

Prepare the cake mix according to the instructions on the package.

Bake

Pour the cake batter into the prepared baking pan. Bake the cake in the preheated oven for about 25 minutes, until a toothpick inserted in the center comes out clean.

Poke holes in the cake

Leave the cake to cool for 10 minutes and when slightly cooled, poke holes in the cake using the handle of a wooden spoon.

Make filling

Whisk 1 can of sweetened condensed milk, ⅓ cup of heavy cream, ⅓ cup of cocoa powder and ½ a cup of Baileys together in a medium-sized bowl.

Pour the filling over the cake

Pour the filling over the cake and use a spatula to spread it into the holes.

Refrigerate

Chill the cake in the refrigerator for one hour.

Make the frosting

While the cake is chilling, beat 1 cup of butter, 2 ½ cups of powdered sugar, ½ a cup of Baileys, ¼ cup of cocoa powder, 1 teaspoon of vanilla and ½ a teaspoon of salt together in a large bowl using an electric hand mixer.

Add remaining sugar

Add the remaining 2 ½ cups of powdered sugar and beat well until fluffy.

Place the frosting on the cake

Spread the frosting over the top of the cake.

Serve

Garnish with chocolate curls and serve slices with coffee or tea.

My husband was eyeing me down when I poured 1/4 of a cup of our baileys into the cake mix, he thought it would be very distinct that there is alcohol in the cake but after it was done it became his favorite and now we buy baileys just for this dessert!
