1 lb Spaghetti
1 tbsp Unsalted butter
½ cup Shallots julienned
3 cups Zucchini small dice
1 cup Chicken Breast cooked, shredded, or a mix of thigh and breast
8 oz Cottage cheese small curd
2 tbsp Cilantro minced, plus more for garnish
Kosher Salt to taste
Black pepper freshly ground, to taste

This Pasta with Zucchini recipe is a weeknight-friendly, delicious, simple, and healthy dish, ready in just 15 minutes. The dish itself requires chicken meat, zucchini, shallots, cottage cheese, and cilantro and can be ready in time for the pasta to be cooked. My kids love to put cottage cheese on everything, so this recipe is a great way to offer them a healthy zucchini too. Besides, this dish is budget-friendly and requires no fancy ingredients.

The overall taste of this dish is mild and fresh. To give it a kick, try adding some crushed red pepper flakes while sautéing the shallots and zucchini.

Steps to make Pasta with Zucchini


Cook pasta


In a large pot of salted boiling water, add 1 pound spaghetti and cook according to package instructions. Reserve ¼ cup of pasta water.


Sauté shallots and zucchini


In a large skillet over high heat, melt 1 tablespoon unsalted butter and add ½ cup julienned shallots and 3 cups diced zucchini. Sauté until just starting to caramelize, about 5 minutes. Season with salt and black pepper to taste.


Add chicken and pasta water


Add 1 cup shredded chicken and ¼ cup of pasta water and let heat through.


Combine pasta with cottage cheese and zucchini mixture


Once cooked, drain the pasta and return it to the pot. Add 8 ounces cottage cheese, 2 tablespoons cilantro, and zucchini mixture. Toss to combine, taste, and season if needed.



Serve immediately garnished with more cilantro leaves and freshly ground black pepper. Enjoy!
