These Perfect Scrambled Eggs are one of those recipes that everyone should have in their repertoire. There are two secrets to perfecting these eggs: first is to use butter to cook the eggs. Second, don’t allow the butter to brown, or it will discolor the eggs and leave a strange taste.

Start by melting butter in a frying pan. Pour in whisked egg and cream mixture. Let it sit in the pan without stirring for about 20 seconds. Stir with a wooden spoon, lifting and folding it over from the bottom of the pan. Let it sit for another 10 seconds, then stir and fold again. Repeat until the eggs are starting to set but still slightly runny in places. Remove the pan from the heat and leave for a moment to finish cooking. Stir and serve.
