2 cups All-purpose flour
¼ tsp Salt
⅔ cup Butter cold
4-5 tbsp Water cold
For the Filling:
1 Large eggs separated
12 (¾-ounce) Swiss cheese slices , chopped
1 pound Bacon bits crispy cooked, crumbled
¼ cup Green onion ⅛-inch slices
1 quart (4 cups) Half-and-half
6 Large eggs divided
½ tsp Salt
¼ tsp Ground nutmeg
¼ tsp Black pepper
dash Red pepper

We’ve started to compile a list of quiche recipes and I just had to add these Quiche Lorraine Squares as my top favorite.

Homemade, soft, quiche crust filled with an egg, cheese, bacon and green onion combination seasoned with salt, pepper, a dash of red pepper and nutmeg. It’s warm and delicious and a wonderful feel-good, light lunch or dinner option. 

To make Quiche Lorraine Squares, you will need the following ingredients:

Steps to make Quiche Lorraine Squares

Preheat oven

Preheat the oven to 375 °F.

Combine crust ingredients

In a large mixing bowl, combine 2 cups of all-purpose flour and ¼ teaspoon salt then cut in ⅔ cups of cold butter using a pastry blender or fork.

Add water

Mixture should resemble coarse crumbs then add just enough water to moisten the dough, about 4-5 tablespoons. Roll into a ball-shape.

Prepare crust

Roll out the prepared dough onto a lightly floured surface into a 16x12-inch rectangle shape. Transfer to an ungreased 9x13 baking dish and press into the bottom and up the sides.

Beat egg

In a mixing bowl, beat 1 egg white and brush over the dough.

Add cheese, bacon and green onions

Sprinkle ¾ ounce of Swiss cheese over the pastry and top with 1 pound of crumbled, crispy bacon and ¼ cup of green onion slices.

Combine filling mixture

In another mixing bowl, whisk 1 egg yolk with 5 eggs, 4 cups half & half, ½ teaspoon of salt, ¼ teaspoon of ground nutmeg, ¼ teaspoon of pepper and a dash of red pepper until combined. Pour over the ingredients in the quiche.

Bake

Bake in the preheated oven for about 45-55 minutes until baked in the center and knife in the center comes out clean.

Rest for about 15 minutes before slicing into squares for serving!
