In my opinion, the best snack to have on standby is a Mini Quiche with Spinach. I make mine with my own homemade wonton wrappers meaning that they are a slightly lighter version of regular mini quiches which tend to have a pastry crust.

If you make these mini quiches, start by pressing wonton wrappers into a lightly greased muffin cup. You need to ensure maximum coverage of the muffin cup so I find it helps to turn the pan before pressing in the second wrapper. Whisk the eggs together with the roasted peppers, spinach, milk and seasoning. Divide between the muffin cups and bake for 20-25 minutes. Enjoy warm.

    Heat the oven and prepare a muffin pan

    Preheat the oven to 350 °F. Lightly grease a 6 cup muffin pan with cooking spray.

    Place a wonton wrapper into the bottom of each muffin cup and press down. Place a second wonton wrapper into the muffin cups at an angle to ensure the two wrappers do not overlap each other.

    Place 3 eggs, ½ a cup of roasted red peppers, ½ a cup of spinach, ¼ cup of milk, ½ a teaspoon of salt and ⅛ teaspoon of black pepper in a bowl. Whisk until fully combined.

    Divide the egg and spinach filling between 6 cups of the muffin pan. About ¾ full each muffin cup.
