This amazingly easy eggnog is made with cashews, coconut milk, dates, nutmeg, vanilla, and a pinch of salt – keeping it vegan and gluten-free too. Make sure to soak raw, unsalted cashews 3-4 hours before starting the recipe. If you are pressed for time, soak the nuts for 15 minutes in boiling water.

Steps to make Thick & Rich Vegan Eggnog

Combine ingredients

In a high-speed blender, place 2 cups soaked cashews, 8 Medjool dates, 1 ½ cups water, 2 cans lite coconut milk, 2 tablespoons ground nutmeg, 2 tablespoons vanilla bean paste or pure vanilla extract, and ¼ teaspoon fine-grain sea salt.

Blend until smooth and creamy.

Taste and adjust sweetness

Taste and adjust sweetness by adding and blending the additional dates if you wish.

Refrigerate for at least one hour to chill before serving.

Make cinnamon-sugar rims

On a small shallow plate, mix 1 teaspoon cinnamon and 2 tablespoons sugar. Pour some water into a second plate. Dip the rims of the glasses first into the water and next in the cinnamon sugar.

Serve

Serve in cinnamon-sugar rimmed glasses, adding a bit of rum to each adult serving if you wish. Sprinkle with additional ground nutmeg and enjoy! Keep refrigerated for 4-5 days.
