½ cup Parmesan cheese grated
⅓ cup Panko bread crumbs
1 Large eggs
2 cloves Garlic minced
1 tsp Parsley chopped
1 tsp Dried basil
1 tsp Dried oregano
1 lb Lean ground beef
1 tbsp Olive oil
8 Black olives halved
1 (1-oz) stick String cheese cut into 16 slices
1 (16-oz) jar Spaghetti sauce

Zombie Eyes – Halloween Meatballs

Kids and adults alike will love the taste of these savory Zombie Eyes – Halloween Meatballs. I’m always looking for delicious ways to add some healthy party food to Halloween bash. After experimenting with different ingredients, I came up with this fun and easy recipe, which my picky kids love and request regularly.

These homemade beef meatballs are tender, super moist, packed full of flavor, and dressed up for your Halloween party. The recipe is really easy to make. While the spaghetti is boiling, mix the ingredients for meatballs and form 16 equal-sized meatballs. Bake the meatballs in the preheated oven for 15 minutes. Meanwhile, make the eyes. Once the meatballs are baked, you will need 16 forks to assemble the zombie eyes. Arrange them on a platter, garnish with tomato sauce and serve. My advice? Make a double batch because these meatballs won’t last long. Absolutely fa-boo-lous!

Cook spaghetti

In a large pot of lightly salted boiling water, cook 1 (8-ounce) package spaghetti, stirring occasionally, until al dente, about 12 minutes. Drain and set aside.

Heat oven

Preheat the oven to 400 ºF.

Make meatball mixture

In a large mixing bowl, mix together ½ cup grated Parmesan cheese, ⅓ cup panko bread crumbs, 1 large egg, 2 minced cloves garlic, 1 teaspoon chopped parsley, 1 teaspoon dried basil, and 1 teaspoon dried oregano. Fold in 1 pound ground beef and mix with hands until blended.

Shape meatballs

Using a cookie scoop, form 16 equal-sized meatballs.

Place meatballs on baking sheet

Place the meatballs in an even layer on a baking sheet.

Bake the meatballs for 15 minutes. Once baked, remove from the oven and leave to cool until safe to handle.

Make eyes

Meanwhile, use a straw to punch a hole through each olive half and the center of each string cheese slice. Insert the round olive piece inside the hole in the string cheese slice for the eyes.

Assemble

Twirl a few strands of cooked spaghetti around each of 16 forks and spear a meatball onto each fork. Arrange on a serving platter. Spoon some spaghetti sauce onto the center of each meatball. Place the olive-cheese eye over the sauce. Spoon the remaining sauce over the spaghetti.
