These delicious Buffalo Meatball Pumpkins are a fun, adorable addition to any Halloween party. If you want to make something special for the kids and the weird Halloween food is not for you, make these cute chicken meatballs look like pumpkins. Insert a tip of the pretzel rod or stick into the tops of meatballs for a pumpkin stem. A small piece of parsley will work for a pumpkin leaf. 

They do look cute, and besides, they are the meat lover’s dream. They are chicken meat mixed with bread crumbs, blue cheese, ranch dressing, and wing sauce. Shaped into meatballs, baked to delicious perfection and covered with dressing mixture. Each one is perfect for bite-sized snacking! This dish is flavorful and quick to make.     Heat oven and prepare baking sheet

    Preheat the oven to 350 ºF and line a rimmed baking sheet with foil and spray with cooking spray.

    In a bowl, place 1 pound ground chicken breast, 1 cup panko bread crumbs, ¼ cup crumbled blue cheese, 1 beaten egg, and 2 tablespoons each of ranch dressing and buffalo wing sauce and mix just until combined.

    Using about 1 tablespoon of the meatball mixture for each meatball, shape the mixture into 16 meatballs and place on the prepared baking sheet.

    Make dressing mixture

    Melt 3 tablespoons of butter. In a small bowl, combine melted butter with 4 tablespoons ranch dressing and 3 tablespoons buffalo wing sauce. Whisk together until the mixture is smooth.
