Caprese Gnocchi
This Caprese Gnocchi is such a great Italian dish. Who doesn’t love caprese right? The combination of tomato, basil and fresh cheese is unbeatable. It’s so fresh and delicious – I am transported to Italy immediately once I taste it. In this recipe I swap the traditional mozzarella for burrata which has an outer shell that resembles mozzarella, while the inside has a creamy, soft texture.
To make this, start by preparing the gnocchi in the traditional Italian way. Once the gnocchi pieces are made, cook them in a large pan of salted boiling water. Meanwhile sauté cherry tomatoes in butter and add the gnocchi pieces and grated parmesan cheese. To serve, place the gnocchi and tomatoes on a serving platter and top with burrata cheese and fresh basil leaves. Unbeatable!

Obsessed with the flavors in this, just the right amount of spice and not too dry or juicy I even added a bit of ground beef to the dish too.
Loving the caprese gnocchi 5 stars all the way, took one bite and just knew it was meant to be.
Me and my fiance devoured this in minutes it was sooo yummy thx for sharing.
Delicious though I swapped out a few things, parmesan cheese for normal chedder and mozzarella and also cherry tomatos for sundried instead :)
Needed a bit more salt but other than that it was yummy, thanks.
Not too happy with it sadly I think I liked the shrimp scampi gnocchi more but this was a favorite of my moms.

Tastiest gnocchi dish out there, perfect for lunch, dinner or brunch, it's crunchy and juicy at the same time, perfect.
Takes a long time to make this but it's actually quite good just hope to find a way to shorten the time eventually.
