Shrimp Scampi Gnocchi

Share

The Shrimp Scampi Gnocchi is my husband’s favorite dinner and he suggests pairing a good dry white wine with this course. Simple to make but fancy in flavor, no one would even know.

Using store bought gnocchi is probably easier and skips a few steps, however, if you do have a good homemade gnocchi recipe then definitely try and experiment with that. Homemade pasta is always fun to make!

To make Shrimp Scampi Gnocchi, you will need the following ingredients:

Ingridiens for Shrimp Scampi Gnocchi

Steps to make Shrimp Scampi Gnocchi

1

Boil gnocchi

10

In a large pot of salted, boiling water, cook 1 package (16-ounces) of potato gnocchi according to package instructions. Drain well.

2

Sauté gnocchi

5

In a large skillet over medium-high heat, heat 2 tablespoons of olive oil and add the boiled gnocchi. Sauté for about 2-3 minutes per side until golden and lightly crisped. Remove from skillet and set aside.

3

Cook shrimp

5

In the same skillet, melt 2 tablespoons butter and add 8 ounces of medium shrimp. Season with salt and pepper, to taste and then cook, tossing occasionally, for about 2-3 minutes until cooked through and pink. Then, remove from skillet and set aside.

4

Add garlic

1

Add 3 cloves of minced garlic and cook while stirring, for about 1 minute until aromatic.

5

Add chicken stock and lemon juice

4

Pour in ⅓ cup of chicken stock and lemon juice from 1 lemon. Bring to a boil, then reduce heat and simmer for about 2 minutes until the sauce has reduced to half.

6

Add butter

3

Add remaining 4 tablespoons of butter, 1 tablespoon at a time until melted through and sauce is smooth.

7

Add gnocchi and shrimp

2

Return sautéed gnocchi to the skillet along with prepared shrimp scampi and gently toss to coat and mix.

8

Serve

Garnish with a few sprinkles of parsley leaves and serve!

Slightly too zesty for me and the parsley tasted too strong in this dish, it wasn't inedible though so I will make it again just kinda different.

Decided to add some sundried tomatoes too and boy that really made it juicy and delicious, would even go as far as to add a sauce.

Not too filling but it's good if you have it with some penne pasta or rice, something to make you full.
