1 Eggs beaten
4 tbsp Cherry jam
200 g Cherries pitted and halved
For the frangipane
70 g Butter room temperature
70 g Caster sugar
2 Eggs
½ tsp Vanilla extract
70 g ground Almonds
20 g All-purpose flour
Vanilla ice cream to serve

These Cherry Jam and Almond Galettes are a perfect quick and easy sweet treat. I use ready-made puff pastry when I make these tasty tarts. Using ready-made pastry cuts down on the preparation time. Nutty frangipane provides richness and texture.

To make these galettes, take some ready-made puff pastry and cut it into circles for the pastry base. Make a nutty frangipane from ground almonds and add a jam and cherry filling to the frangipane and bake. Cool for a few minutes before serving with vanilla ice cream. Yum!

Steps to make Cherry Jam & Almond Galettes

Preheat the oven

Preheat the oven to 390 °F.

Cut out pastry circles

Using a rolling pin, roll out the pastry to ¼-inch thick. Cut out 4 pastry circles, each about 5½ inches in diameter. Freeze the unused pastry to use another day. Score a border ¾ inch from the edge of the pastry. Place the pastry discs on a non-stick baking sheet and brush with beaten egg.

Bake pastry circles

Bake the pastry circles for about 15 minutes. Remove from the oven and gently press the middles down so you have a pastry shell. Leave to cool.

Make the frangipane

Beat 70 grams of butter and 70 grams of sugar until pale. Add 2 eggs to the mixture one at a time. Beat in ½ a teaspoon of vanilla, 70 grams of ground almonds and 20 grams of flour. Mix well.

Add the frangipane to the pastry

Spoon the frangipane mixture onto the pastry shells.

Make filling

Mix 4 tablespoons of cherry jam and 200 grams of pitted cherries and spoon the mixture over the frangipane.

Bake

Bake for 15 more minutes until the pastry is golden and the frangipane sets and is light golden.

Remove from the oven and leave to cool for a few minutes.

Serve

Serve these delicious galettes with vanilla ice cream.
