To make these chocolate cookies, you will need only five simple ingredients: butter, cocoa powder, rice flour, all-purpose flour, powdered sugar, and vanilla. If you want to be on the fancier side, make a simple chocolate ganache, spoon it into the center of each large shortbread star, and top with a smaller one. 

To make these chocolate stars, start by making the dough. I like to use rice flour in my shortbread cookies. It helps to make the cookies softer with a deliciously crumbly texture. Chill the dough in the refrigerator for 30 minutes before rolling it out between two pieces of parchment. Cut out the cookies and bake until the edges are just firm. Leave to cool slightly, then sandwich them with a sweet chocolate ganache and dust with powdered sugar before serving. And get ready to be the star of your next cookie exchange party!

Steps to make Chocolate Shortbread Stars

Combine dry ingredients

In a food processor, combine 200 grams chopped butter, 1/3 cup cocoa powder, 1/2 cup rice flour, 1 1/2 cup all-purpose flour, and Âľ cup powdered sugar and pulse until the mixture resembles breadcrumbs.

Add vanilla

Add 2 teaspoons vanilla extract and pulse until the mixture comes together.

Chill dough

Form into a disc and wrap in plastic wrap. Chill for 30 minutes in the refrigerator.

Heat oven and prepare baking sheets

Preheat the oven to 180 °C/350 °F and line 3 cookie sheets with parchment paper.

Roll out dough and cut out small stars

Roll the chilled dough out between 2 pieces of parchment paper until ⅛-inch thick. Peel off the parchment and using a 1 ½-inch star-shaped cookie cutter, cut 30 stars from the dough. Arrange the cookies on the prepared cookie sheet spacing ½-inch apart. Return the remaining dough to the fridge.

Bake

Bake the cookies until the edges are just firm to touch, 6 to 8 minutes.

Cool

Leave the cookies to cool on the cookie sheet for 5 minutes before transferring them to a wire rack to cool completely.

Cut out larger stars

Roll out the remaining dough and use a 2 ¼-inch star-shaped cookie cutter to cut out 30 stars, re-rolling dough scraps as needed. Arrange the stars, ½ inch apart, on the remaining sheets.

Bake

Bake, 1 cookie sheet at a time, until the edges are just firm, 8 to 10 minutes.

Cool

Leave the cookies to cool on the cookie sheet for 5 minutes before transferring them to the wire rack to cool completely.

Make ganache

Place â…“ cup milk chocolate melts and 1 tablespoon heavy cream in a microwave-safe bowl. Microwave on high (100%) for 30 seconds, stirring halfway through, or until melted and smooth. Let cool for 10 minutes.

Assemble

Spoon ½ teaspoon chocolate ganache in the center of a large star and top with a small star, pressing down gently to secure. Repeat with the remaining stars and ganache. Let sit for 15 minutes.

Dust the cookies with powdered sugar and serve.
