These Coconut Flour Biscuits are so fluffy and tender that everyone at the table will be reaching for one of them! The recipe is made without grains and butter, but you would never tell. It also uses only keto, low-carb ingredients. Besides, it’s a cinch to make. It doesn’t require yeast or to whip egg whites. All you need is five simple ingredients, two bowls, and a large baking sheet. The batter is ready to go into the oven in less than 15 minutes, and the biscuits come out just 30 minutes later. Tested and approved!   

Before you start, be sure to sift the coconut flour to ensure there are no lumps left. Mix the dry ingredients in a small bowl, whisk the wet ingredients in another, and then combine the contents of the two bowls. Cover the dough and leave it to sit and thicken at room temperature for 10 minutes. Finally, spoon out 12 portions of the dough onto a pre-lined baking sheet and press down with the back of a spoon to form a thick disk shape. Bake until deliciously golden on top and enjoy!

Steps to make Coconut Flour Biscuits

Preheat oven and prepare baking sheet

Preheat the oven to 370 °F and line a large baking sheet with parchment paper. Set aside.

Combine dry ingredients

In a small bowl, mix together 1 cup sifted coconut flour and 2 teaspoons baking powder. Set aside.

Combine wet ingredients

In a large bowl, whisk together ½ cup melted coconut oil and 7 eggs until well combined and smooth.

Combine dry and wet ingredients

Fold in the wet ingredients into the dry ingredients, along with ½ cup shredded cheese, and mix until a thick dough forms. Let the dough sit for 10 minutes to thicken up.

Spoon onto baking sheet

Spoon out 12 portions of dough onto the prepared baking sheet. Using the back of a spoon, press down on each portion to form a thick disk.

Bake for 27-30 minutes or until golden on top.

Once baked, leave to sit for 5 minutes, and then serve.
