Keto Instant Pot Cheddar Soup
This Keto Instant Pot Cheddar Soup is low-carb comfort food at its best. It’s easy and delicious, cozy yet healthy. This keto soup is everything we need right now. It’s full of veggies and cheese and has a nice warming kick. Plus, this one-pot soup is so easy to throw together.
My favorite way to make a big pot of hot soup is to add all of the ingredients to my Instant Pot and just let it do its thing. Start the recipe by heating up oil on the sauté setting. Add onions and garlic and cook until browned. Add cauliflower, bell pepper, onion powder, salt and black pepper to taste. Pour in the chicken stock. Place a lid on your Instant Pot and set the valve to SEALING position. Select the SOUP function and set the timer for 15 minutes. Once done, carefully release the steam. Add in Cheddar, half-and-half, turkey bacon, mustard, and a few dashes of hot sauce. I love the spicy kick that the hot sauce gives, but you can always scale back the spiciness or add more. Select SAUTÉ mode and cook until the cheese has melted. Finish off this keto soup with green onions, more cheese and bacon for a dinner that’s mouthwateringly delicious.
