6 Chicken thighs boneless, cut into bite-size pieces
3 to 4 halves Chicken Breast cut into bite-size pieces
2 tbsp Olive oil
2 cloves Garlic minced
1 large Onion coarsely chopped
1 Red bell pepper chopped
4 (16-ounce) cans White beans Great Northern
3 (14.5-ounce) cans Tomatoes diced, undrained
1 (16-ounce) jar Tomatillo salsa
2 (4-ounce) cans Chili pepper mild green , chopped
2 to 4 tbsp Jalapeño pepper diced
1 cup Corn kernels
2 tsp Chili powder
1 tsp Cumin ground
1 tsp Dried oregano leaf
1 tsp Salt
1/4 tsp Black pepper ground
Sour cream optional
Cilantro fresh chopped , optional
Monterey Jack cheese or cheddar , shredded, optional

This Hearty Chicken Chili With White Beans is a great recipe to make for friends. I love all types of chili and this one is packed full of delicious flavors and healthy ingredients. I cook this dish in a dutch oven – low and slow to create a tender succulent chicken chili. Sometimes I make this in advance and simply heat it up when it’s time to eat. 

I start by sautéing the chicken and add onion, garlic and bell pepper. I then add the beans, tomatoes, salsa, peppers, corn and spices and allow the chili to simmer for around an hour. It couldn’t be easier!

    Fry the chicken

    In a large saucepan or Dutch oven, fry the chicken in the olive oil over medium heat.

    Sauté the onion

    Add the onion and sauté with the chicken until it is soft.

    Add the garlic and bell pepper

    Stir in the garlic and bell pepper and continue to fry for 2 minutes.

    Mix in the beans, diced tomatoes, salsa, chile peppers, jalapeno peppers, corn, chili powder, cumin, oregano, salt, and pepper.

    Bring to a boil

    Bring the chilli to a boil. Then turn the heat down to low. Cover, and simmer for about an hour

    Serve

    Serve with rice and optional extras: sour cream, cilantro, and shredded cheese.
