Ingredients

2 tsp Olive oil
1 ¼ lbs Lean ground beef
1 Yellow onions medium, chopped
2 cloves Garlic minced
1 Jalapeño pepper seeded and finely chopped ,optional
2 (14 ½-oz) cans Diced tomatoes and green chiles
1 (14-oz) can Beef broth low-sodium
1 (8-oz) can Tomato sauce
1 tbsp Chili powder
1 tsp Cumin ground
¾ tsp Ground paprika
¼ tsp Dried oregano
1 ½ tbsp Powdered ranch dressing mix
⅓ cup Cilantro chopped
1 tbsp Lime juice fresh
Salt to taste
Black pepper freshly ground , to taste
1 ½ cups Corn frozen
1 (14 ½-oz) can Black beans drained and rinsed
1 (14 ½-oz) can Pinto beans drained and rinsed
Toppings:
3/4 cup Cheese mexican blend cheese , shredded
Red onion or green ,chopped
Avocado diced
Corn tortillas strips/chips

This Easy Taco Soup is delicious and filling and takes only 10 minutes to prepare. This soup is a classic mix of ground beef with Mexican flavors like chili, cilantro, lime, and jalapeno. It makes a great weekend lunch or midweek dinner. Try it out soon.

To make this delicious soup, start by heating oil in a large pot. Add beef in and onion and cook until browned. Add the jalapeno and garlic and saute before draining excess fat from the mixture. Add tomatoes, chilis, beef broth, tomato sauce, chili powder, cumin, paprika, oregano, ranch dressing mix and season to taste. Cover the pot and simmer for 30 minutes, stirring occasionally. Add the corn, black beans, and pinto beans and cook until heated through. If the soup is too thick, add ½ cup of water. Stir in cilantro and lime and serve warm finished with desired toppings.

Steps to make Easy Taco Soup

Heat oil

Heat 2 teaspoons of oil in a large saucepan.

Cook beef and onions

Add 1 ¼ pounds of ground beef and 1 medium chopped onion. Cook while crumbling and stirring occasionally until browned.

Add jalapeno and garlic

Add 1 chopped jalapeno and 2 minced cloves of garlic. Saute for 1 minute longer before draining the excess fat from the beef mixture.

Add most of remaining soup ingredients

Stir in 2 cans of tomatoes with green chilis, 1 can of beef broth, 1 can of tomato sauce, 1 tablespoon of chili powder, cumin, paprika, oregano, and ranch dressing mix. Season to taste with salt and pepper.

Simmer and add corn and beans

Cover pot with a lid and simmer for 30 minutes, stirring occasionally. Add 1 ½ cups of corn and 1 can each of black beans and pinto beans. Continue to simmer until heated through.

Check consistency

Check the consistency of the soup and if it is too thick, add ½ a cup of water to thin the soup if desired.

Add cilantro and lime juice

Stir in ⅓ cup chopped cilantro and 1 tablespoon fresh lime juice if using.

Add toppings

Top with a selection of your favorite toppings like shredded Mexican blend cheese, chopped green or red onions, diced avocados, and corn tortilla strips/chips.
