1 Onion medium, chopped
2 cloves Garlic minced
1 tsp Dried oregano
½ tsp Cumin
4 cups Cauliflower rice squeezed from excess moisture
Kosher Salt to taste
Black pepper freshly ground, to taste
1 tbsp Tomato paste
2 cups Rotisserie chicken shredded
1 (15-oz) can Black beans drained and rinsed
1 cup Corn kernels thawed
1 cup Tomatoes chopped
2 Jalapeño pepper thinly sliced
¼ cup Cilantro freshly chopped
1 cup Cheddar cheese shredded
1 cup Monterey Jack cheese shredded
1 Lime for serving

Cheesy Chicken & Black Bean Cauli Rice is a perfect dish to jump on the cauliflower rice train if you haven’t done it yet. Cauliflower rice is so popular now that you can buy it in almost every grocery store. Alternatively, you can easily make your own using a food processor. Before cooking, make sure to squeeze all the excess moisture from the cauliflower rice using a clean kitchen towel.

The recipe is lower in carbs and higher in nutrients than traditional Mexican chicken and white rice but is just as delicious. This one-pan meal is easy, flavorful, and pretty impressive too. Seasoned with Mexican spices, loaded with shredded chicken, black beans, corn, tomatoes, and topped with plenty of melted cheese – this recipe makes a healthy family dinner. Besides, leftovers, if you have any, not only reheat well but are also great in enchiladas or tacos. Enjoy!

Cook onion

In a large skillet over medium heat, heat 1 tablespoon olive oil and add 1 chopped onion. Cook, stirring occasionally, for about 5 minutes or until soft.

Add garlic, oregano, and cumin

Stir in 2 cloves minced garlic, 1 teaspoon dried oregano, and ½ teaspoon dried cumin and cook for 1 minute.

Add cauliflower

Add some more olive oil to the skillet if needed and then add 4 cups drained cauliflower rice. Season with salt and black pepper to taste and cook, stirring occasionally, for 3-5 minutes.

Add tomato paste

Stir in 1 tablespoon tomato paste.

Add chicken, beans, corn, tomatoes, jalapeños, and cilantro

Add in 2 cups shredded rotisserie chicken, 1 (15-oz) can black beans, 1 cup corn kernels, 1 cup chopped tomatoes, and 2 thinly sliced jalapeños, and ¼ cup chopped cilantro. Cook, stirring occasionally, until heated through for 2-3 minutes.

Top with cheeses

Top with 1 cup each shredded Cheddar and Monterey Jack cheeses. Cover with a lid and let melt, 2 minutes.

Serve hot with lime wedges and enjoy!
