For honey-lime vinaigrette:
1 ½ tsp Lime zest
¼ cup Lime juice
2 tbsp Honey
1 clove Garlic minced
½ tsp Salt
¼ tsp Black pepper
¼ tsp Crushed red pepper
3 tbsp Canola oil
For coleslaw:
1 head Red cabbage small, about ¾ lb, shredded
1 cup Carrots about 2 medium carrots, shredded
2 Green onion thinly sliced
½ cup Cilantro fresh, leaves

Honey Lime Coleslaw

A lighter take on traditional coleslaw, this version uses honey-lime vinaigrette in place of classic mayo-based dressing. It’s refreshing, summery, and so delicious!

This simple coleslaw is a mix of shredded red cabbage, carrots, and thinly sliced green onions. The vinaigrette is tangy, sweet, citrusy and just a touch spicy. It’s the perfect pairing to a crunchy slaw. I also like to toss in some fresh cilantro leaves just before serving for herbaceous freshness. This fuss-free side dish requires minimal prep time and tastes ridiculously delicious for something so light and simple.

Steps to make Honey Lime Coleslaw


Make honey-lime vinaigrette


In a small bowl, whisk together 1 ½ teaspoons grated lime zest, ¼ cup lime juice, 2 tablespoons honey, 1 minced garlic clove, ½ teaspoon salt, ¼ teaspoon pepper, and ¼ teaspoon crushed red pepper flakes. Gradually add in 3 tablespoons canola oil, whisking until smooth.


Combine coleslaw ingredients


In a large bowl, combine the shredded red cabbage, 1 cup shredded carrots, and 2 thinly sliced green onions.




Pour the honey-lime vinaigrette over the slaw and toss to coat. Chill, covered, for at least 2 hours.



Garnish with fresh cilantro leaves and serve. Enjoy!
