Jalapeno Popper Deviled Eggs

Ask anyone who has been to one of my legendary cocktail parties what their favorite snack was and they will tell you that these Jalapeno Popper Deviled Eggs hit the mark! My party guests have been raving about them and I know yours will too! 

This take on deviled eggs combines spicy jalapeno peppers with bacon, egg yolks, mayo, cream cheese and Dijon mustard. Simply remove the egg yolks from halved eggs. Mix the egg yolks with cream cheese, mayonnaise, Dijon mustard, apple cider vinegar, salt and cayenne until smooth. Stir in crispy bacon and fill the egg white halves with the filling. Serve topped with crispy bacon and thinly sliced jalapeno.

    Cook the bacon

    Fry the bacon in a hot skillet until it is crispy all over. Remove the bacon from the pan with a slotted spoon. Drain the excess oil and set aside.

    Fry jalapeno and garlic

    Reserve ½ a tablespoon of bacon grease in the skillet. Fry a chopped jalapeno and 1 minced garlic clove in the skillet with the bacon grease for 1 to 2 minutes

    Remove yolks

    Half the eggs lengthwise. Using a spoon, scoop out the egg yolks and place them in a separate bowl.

    Mash egg yolks with 3 ounces of cream cheese, 3 tablespoons of mayonnaise, 1 teaspoon of Dijon mustard, ¼ teaspoon of apple cider vinegar, a pinch each of salt and cayenne until smooth.

    Stir the cooked jalapeno and garlic into the egg yolk mixture.

    Reserve about ¼ of the crispy bacon and mix the rest of the bacon into the egg yolk mixture.
