Flavorful and delicious, this Mediterranean Butter Rice recipe is a comfort dish that will leave you feeling light. Nutty and floral white basmati rice enriched with just the right amount of butter and flavorful stock to perk up the dish. Simple and elegant, this butter rice recipe can be made in under 30 minutes with just pantry staples and a stovetop. The end result is a perfectly cooked, delicious and fluffy bowl of rice.

First, wash the rice. It may seem like an extra step, but it makes a big difference — especially with long-grain rice varieties. Rinsing the rice removes the surface starch that causes the rice to clump together as it cooks. Use a bowl to wash the rice by rinsing it in several changes of water until the water is clear. Then drain well in a fine-mesh strainer. Next, melt the butter in a saucepan and add the rice. Cook, stirring often, for about 30 seconds, and then pour in the broth. Season with salt, stir, and bring to a boil. Once at a boil, cover and reduce the heat to low, then let the rice simmer until all the liquid is absorbed. Remove the rice from heat and let it steam, keeping the pot covered, about 10 minutes. Gently fluff up the rice with a fork before serving and allow it to stand for a few minutes. Serve topped with extra butter, if you wish, and enjoy!

In a saucepan over medium heat, melt 3 tablespoons unsalted butter.

Add rice

Add 1 cup rice and stir for about 30 seconds just to separate the grains and break up the clumps.

Add broth and salt

Add in 2 cups no-salt vegetable or chicken broth and ¼ teaspoon salt, stir, and bring to a boil.

Once at a boil, turn the heat to low and cover the pot. Cook for about 15 minutes or until all the liquid is absorbed. Remove from the heat and let the rice sit for about 10 minutes, keeping the pot covered.

Serve

To serve, fluff up the rice with a fork and let it stand for a few minutes. Serve topped with extra butter, if you wish, and enjoy!
