2 Shallots diced
1 ½ cups Risotto rice Arborio
½ cup Dry white wine
Sea salt to taste

3 tbsp Chives finely chopped
4 tbsp Butter

This Gourmet Mushroom Risotto is an authentic Italian risotto. Authentic risotto means that it is cooked slowly which makes it so perfect. This risotto is perfect with grilled meat or and chicken. Remember that the rice should have a slight bite to it but it shouldn’t be hard in the center. Your dinner companions will want to lick their plates!

To make this dish, begin by cooking mushrooms in a skillet with olive oil. Remove the mushrooms and their liquid and set aside. Add the shallots to the same skillet. Add rice and stir to coat with the oil. When the rice turns a pale, golden color, pour in wine and stir constantly until the wine is fully absorbed. Add broth to the rice in stages, stirring between additions until the broth is absorbed. Once the liquid is absorbed and the rice is al dente, remove the skillet from heat, and stir in mushrooms with their liquid, butter, chives, and Parmesan. Season with salt and pepper to taste before serving.

Steps to make Gourmet Mushroom Risotto

Warm broth

Warm the broth in a saucepan over low heat.

Cook mushrooms

Heat 2 tablespoons of oil in a large saucepan over medium-high heat. Cook the mushrooms for 2 to 3 minutes, until soft. Once soft, remove the mushrooms and their liquid from the pan.

Sauté shallots

Add 1 tablespoon of olive oil to the same pan, and stir in the shallots. Cook for 1 minute.

Stir in rice

Add 1½ cups of arborio rice and stir for about 2 minutes until every grain is evenly coated.

Pour in wine

Pour in ½ a cup wine and stir constantly until fully absorbed.

Add broth

Pour ½ a cup of broth to the rice, and stir until the broth is fully absorbed. Add broth ½ a cup at a time, stirring continuously for about 15 to 20 minutes, until the broth is fully absorbed and the rice is al dente.

Stir in mushrooms, butter and Parmesan

Remove the pan from the heat and stir in the cooked mushrooms with their liquid. Add 3 tablespoons of finely chopped chives, 4 tablespoons of butter, and â…“ cup of freshly grated Parmesan cheese.

Season to taste with salt and pepper.
