This Cheesy Sausage Zucchini Rice Skillet is my go-to midweek dinner when the kids are back to school. I’m guessing if your family is like ours, the first few weeks after the kids go back to school are the most hectic while everyone gets used to the new routines and after school activities.

That’s why I make this one pan dinner weekly in the Fall. The kids love it. It’s super filling after a long day of school and activities and best of all, it only takes 30 minutes from start to table! I use Kielbasa sausage for this dish but you could use any sausage you like. It couldn’t be simpler – everything into the pan. Pour in the broth and there you have it! Read on to find out more.

    Cook the sausage

    Melt 2 tablespoons of butter in a large pan or skillet over medium heat. Cook the sausage until it is lightly browned.

    Pour in the chicken broth. Stir well and break up any browned bits stuck to the bottom of the pan - these are full of flavor.

    Bring to a boil and simmer

    Bring to a boil, then reduce heat to low. Cover the pan and cook for 15 minutes until the liquid has been fully absorbed.

    Fluff up the rice with a fork. Add the zucchini and both cheeses. Stir well until cheese melts into the rice. Then add the remaining 2 tablespoons of butter and stir until fully melted.
