Tuna, Cheese, and Rice Casserole
We all have one of those “back of the store cupboard” recipes don’t we? This Tuna, Cheese, and Rice Casserole is mine. A simple yet nourishing and delicious meal that you can make using a few ingredients you probably always have in your pantry: canned tuna, rice, peas, and onion.
To make this delicious casserole, start by making a sauce using butter, onion, celery, flour, seasonings, milk, and cheese. Assemble the casserole by adding tuna and peas to the sauce along with the pimiento if using. Season and spoon half of the hot rice into the prepared baking dish and spread cheese over the top. Pour over half of the sauce and repeat the layers, finishing with the remaining cheese. Combine bread crumbs with melted butter in a bowl and sprinkle the crumbs over the top of the casserole. Bake until the topping is light golden brown and the casserole is bubbling around the edges.

Heat oven and prepare casserole dish

Make sauce
7minMelt 4 tablespoons of butter in a skillet over medium-low heat. Add ¼ cup each of onion and celery. Sauté for about 5 minutes until tender. Stir in the 3 tablespoons of flour, ⅛ teaspoon of freshly ground black pepper, and ½ teaspoon of dry mustard. Continue cooking while stirring, until smooth and bubbly.
