Ingredients

For sauce:
6 tbsp Butter divided
¼ cup Onion minced
¼ cup Celery chopped
3 tbsp All-purpose flour
⅛ tsp Black pepper freshly ground black pepper or to taste
½ tsp Mustard dry
½ tsp Worcestershire sauce
2 cups Milk
8 ounces (2 cups) Cheddar cheese shredded sharp Cheddar cheese (divided)
For casserole:
1 (7-oz) can Can of tuna drained and flaked
1 - 1 ½ cups Green peas cooked frozen or canned peas (drained)
2 tbsp Pimiento diced, optional
Kosher Salt to taste
4 cups Cooked rice hot
1 cup Bread crumbs fresh

We all have one of those “back of the store cupboard” recipes don’t we? This Tuna, Cheese, and Rice Casserole is mine. A simple yet nourishing and delicious meal that you can make using a few ingredients you probably always have in your pantry: canned tuna, rice, peas, and onion.

To make this delicious casserole, start by making a sauce using butter, onion, celery, flour, seasonings, milk, and cheese. Assemble the casserole by adding tuna and peas to the sauce along with the pimiento if using. Season and spoon half of the hot rice into the prepared baking dish and spread cheese over the top. Pour over half of the sauce and repeat the layers, finishing with the remaining cheese. Combine bread crumbs with melted butter in a bowl and sprinkle the crumbs over the top of the casserole. Bake until the topping is light golden brown and the casserole is bubbling around the edges.

Steps to make Tuna, Cheese, and Rice Casserole

Heat oven and prepare casserole dish

Preheat the oven to 400 °F. Lightly grease a 2-quart casserole dish using butter.

Make sauce

Melt 4 tablespoons of butter in a skillet over medium-low heat. Add ¼ cup each of onion and celery. Sauté for about 5 minutes until tender. Stir in the 3 tablespoons of flour, ⅛ teaspoon of freshly ground black pepper, and ½ teaspoon of dry mustard. Continue cooking while stirring, until smooth and bubbly.

Add remaining sauce ingredients

Add ½ a teaspoon of Worcestershire sauce and gradually stir in 2 cups of milk. Cook the mixture while stirring, until the sauce thickens. Add 1 cup of the shredded cheese to the mixture and stir until melted.

Add tuna and peas

Add the flaked tuna and peas to the sauce. If desired, stir in 2 tablespoons of pimiento. Taste and season with salt as needed.

Assemble casserole layers

Spoon half of the hot rice into the prepared baking dish and spread ¾ cup of the cheese over the rice. Top with half of the sauce, then repeat the layers. Make sure that the top layer is the remaining shredded cheese.

Sprinkle with bread crumbs

Melt the remaining 2 tablespoons of butter in the pan and toss with 1 cup of bread crumbs in a bowl. Sprinkle the buttered bread crumbs over the top of the casserole.

Bake

Bake in the preheated oven for about 20 minutes until the casserole is hot and bubbling and the bread crumbs are golden brown.

Serve

Cool slightly before serving.
