Simply grill your pork tenderloin chunks on the stove top or a grill pad, if you have, and serve them with a delicious Mediterranean-style orzo pasta filled with fresh baby spinach, grape tomato halves and some crumbled feta cheese.     Generously rub 1½ pounds of pork tenderloin with 1 teaspoon of ground black pepper and cut into 1-inch cubes or chunks.

    In a large, nonstick skillet over medium heat, heat 2 tablespoons of olive oil and add seasoned pork chunks. Cook for about 8-10 minutes until cooked in the center and no longer pink.

    In a Dutch oven, boil 3 quarts of water and then add 1¼ cups of orzo with a 1 teaspoon of salt. Stir and then let cook, uncovered for about 8 minutes.

    Add 6 ounces of baby spinach and stir. Cook for another 45-60 seconds until spinach is wilted and the orzo should be cooked. Drain from the cooking liquid.
