1 tsp Ground pepper coarsely
2 tbsp Olive oil
3 quarts Water
1¼ cups Orzo pasta uncooked
1 tsp Salt
1 package (6 ounces) Baby spinach fresh
1 cup Grape tomatoes halved
¾ cup Feta cheese crumbled

Mediterranean Pork and Orzo recipe

Get dinner done with this extremely easy to make Mediterranean Pork and Orzo recipe. Simply grill your pork tenderloin chunks on the stove top or a grill pad, if you have, and serve them with a delicious Mediterranean-style orzo pasta filled with fresh baby spinach, grape tomato halves and some crumbled feta cheese. It’s simple, it’s easy and it’s everything I look for in a family dinner.

To make Mediterranean Pork and Orzo, you will need the following ingredients:

Steps to make Mediterranean Pork and Orzo

    Season pork

    Generously rub 1½ pounds of pork tenderloin with 1 teaspoon of ground black pepper and cut into 1-inch cubes or chunks.

    Cook pork

    In a large, nonstick skillet over medium heat, heat 2 tablespoons of olive oil and add seasoned pork chunks. Cook for about 8-10 minutes until cooked in the center and no longer pink.

    Cook orzo

    In a Dutch oven, boil 3 quarts of water and then add 1¼ cups of orzo with a 1 teaspoon of salt. Stir and then let cook, uncovered for about 8 minutes.

    Add spinach

    Add 6 ounces of baby spinach and stir. Cook for another 45-60 seconds until spinach is wilted and the orzo should be cooked. Drain from the cooking liquid.

    Add tomatoes to pork

    Add 1 cup of grape tomato halves and toss to combine with the pork.

    Add orzo and cheese

    Stir in the orzo and spinach mix and then ¾ cups of crumbled feta cheese. Toss to combine.

    Serve hot and enjoy!
