4 large Tomatoes sliced
16 small fresh Basil leaves
1 pouch (11 ounces) light Can of tuna in water
1 cup cubed part-skim Mozzarella
3 tbsp Basil minced fresh
2 tbsp Olive oil
2 tbsp Balsamic vinegar

In this Orzo Tuna Salad with Tomatoes recipe, I use whole wheat orzo pasta when I want to help lower my calorie intake. But sometimes I prefer to use normal, white floured orzo for a hearty lunch.

Steps to make Orzo Tuna Salad with Tomatoes

Cook orzo

Cook ¾ cups of orzo pasta according to package instructions.

Arrange tomatoes and basil

On serving plates, arrange 4 large tomatoes that have been sliced and place a whole basil leaf on top of each.

Drain and rinse orzo

Once cooked, drain and rinse the orzo pasta and transfer to a large mixing bowl.

Prepare salad

Mix in 1 pouch of tuna, 1 cup of mozzarella cheese and 3 tablespoons of fresh, minced basil and combine.

Prepare dressing

In a small bowl, whisk 2 tablespoons of olive oil, 2 tablespoons of balsamic vinegar, â…› teaspoon of salt and â…› teaspoon of pepper until well combined. Drizzle over salad and toss to combine.

Portion spoonfuls of the dressed salad over the tomato and basil slices to serve. Enjoy!
