This Healthy Tuna Salad Stuffed in Avocado salad is my go to midweek lunch at the moment. As winter days turn to spring, I start to crave fresh, healthy salads. This is a fantastic lunch. You can prepare the tuna salad filling in advance and simply stuff avocado halve when you wish to eat.
Start by scooping the avocado flesh from 4 avocado halves. Dice and reserve the flesh for the salad. Mix the salad ingredients together in a large bowl. Gently mix in the reserved avocado flesh. Fill the avocado halves with the tuna salad mixture and enjoy!
