This Healthy Tuna Salad Stuffed in Avocado salad is my go to midweek lunch at the moment. As winter days turn to spring, I start to crave fresh, healthy salads. This is a fantastic lunch. You can prepare the tuna salad filling in advance and simply stuff avocado halve when you wish to eat. 

Start by scooping the avocado flesh from 4 avocado halves. Dice and reserve the flesh for the salad. Mix the salad ingredients together in a large bowl. Gently mix in the reserved avocado flesh. Fill the avocado halves with the tuna salad mixture and enjoy!

Scoop out avocado

Scoop out the avocado flesh, leaving a small border of flesh around the edges.

Dice avocado

Dice the avocado flesh and set aside in a small bowl.

Mix salad ingredients

Mix 1 can of tuna, ¼ chopped red onion, 1-2 chopped celery stalks, 3 tablespoons of Greek yogurt, 1 tablespoon of Dijon mustard and the juice of one lemon together in a large bowl. Season with salt and pepper.

Add diced avocado

Mix in the diced avocado gently.

Fill avocado halves

Spoon the tuna salad filling into the scooped out avocado halves.
