For the cake:
2 cups Sugar
⅓ cup Canola oil
6 tbsp Butter softened
2 Large eggs
½ tsp Vanilla extract
2 tsp Lemon rind grated
2 tsp Lemon juice fresh
9 ounces All-purpose flour about 2 cups
3.4 ounces Whole-wheat pastry flour about 3/4 cup
1 tsp Baking powder
¼ tsp Baking soda
¼ tsp Salt
1 cup Sour cream light
¼ cup Milk 2% reduced-fat
For the glaze:
2 cups Strawberries chopped
⅓ cup Sugar
1 tbsp Cornstarch
1 tbsp Lemon juice
1 dash Salt

Pound Cake with Strawberry Glaze


This Pound Cake with Strawberry Glaze is a delicious cake recipe to try. A famous, lemon flavored pound cake baked to perfection drizzled with a strawberry glaze over, it’s just fantastic. It can take some time to make so I usually bake this speciality for Christmas dinner or birthday parties.

When Marie Antoinette said – “Let them eat cake,” I’m pretty sure this is the cake she was talking about!

To make Pound Cake with Strawberry Glaze, you will need the following ingredients:

Steps to make Pound Cake with Strawberry Glaze


Preheat oven


Preheat oven to 350 °F.


Combine wet ingredients


In a large bowl combine 2 cups sugar, oil and butter and beat with a mixer at medium speed until light and fluffy.


Add eggs


While still beating, add the eggs until combined.


Add flavor


Add the vanilla, lemon rind and 2 tablespoons lemon juice and stir well.


Combine dry ingredients


In a bowl, combine the all-purpose flour, whole-wheat pastry flour, baking powder, baking soda, and salt.


Combine sour cream and milk


In a separate bowl, combine the sour cream and milk.


Mix all ingredients


Combine the flour mixture and sour cream mixture alternating with the wet ingredients mixture, beginning and ending with the flour.


Prepare cake


Pour the batter into a 10-cup Bundt pan greased with baking spray.


Bake cake


Bake cake in the preheated oven for 55 minutes until a wooden toothpick inserted into the center comes out clean.




Allow the cake to cool in the pan for 15 minutes before removing from the pan to cool completely on a wire rack.


Prepare the strawberry glaze


In a saucepan, combine the strawberries, ⅓ cup corn starch, lemon juice and salt and bring to a boil. Reduce the heat and cook for a further 3 minutes until thickened.



Strain the glaze through a sieve discarding the solids and drizzle over the pound cake, to serve.
