Buttery and delicious, this Bread Machine Pound Cake has a dense texture, tender crumb, and the perfect golden crust. The added bonus? This recipe takes barely any effort on your part and involves just throwing all of the ingredients into a bread machine and letting it do its magic. Sometimes simple is best.
This recipe is developed for a two-pound bread machine. Note that you’ll be using the cake cycle with a medium crust, but if your machine features a quick bread setting, this recipe will work with that setting too. Once baked, remove the bread pan from the bread machine, and let the cake sit within the warm pan on a wooden cutting board for about 10 minutes. Then remove the cake from the pan and cool completely on a wire rack before serving. Slice and enjoy!
To make the Bread Machine Pound Cake, you will need the following ingredients:
To the pan of your bread machine, add 3 large eggs beaten, ⅓ cup milk, 2 cups bread flour, 3 teaspoons baking powder, ½ cup melted butter, 1 cup sugar, and 1 teaspoon vanilla extract. Check your bread machine’s instructions and add ingredients in the order it recommends.
Select CAKE cycle. Use the medium crust color. If your bread machine allows, use a spatula to scrape the inside of the pan down during the first few minutes of mixing.
Once baked, leave the cake to cool for 10 minutes before turning it out of the pan. Cool completely on a wire rack.
Slice and serve!

Doesn't the Bread Machine Over mix?
Mine mixes the cake for 16 minutes. I have read that over-mixing cakes makes them dense/gummy. I have tried doing quick bread (banana) twice and they are very spongy.
I have not figured out the problem.
