This recipe is developed for a two-pound bread machine. Note that you’ll be using the cake cycle with a medium crust, but if your machine features a quick bread setting, this recipe will work with that setting too. Once baked, remove the bread pan from the bread machine, and let the cake sit within the warm pan on a wooden cutting board for about 10 minutes. Then remove the cake from the pan and cool completely on a wire rack before serving. Slice and enjoy!Â

Doesn't the Bread Machine Over mix?
Mine mixes the cake for 16 minutes. I have read that over-mixing cakes makes them dense/gummy. I have tried doing quick bread (banana) twice and they are very spongy.
I have not figured out the problem.
