1 bunch Kale leaves trimmed and chopped
1 lb Stale onion focaccia cubed
1 Large eggs
2 cups Chicken broth low-sodium, or turkey stock
1 cup Parmesan cheese diced, plus ÂĽ cup shredded

This delicious dressing features Italian fennel sausage, butternut squash, kale, focaccia, and Parmesan cheese. It’s flavorful and healthy and makes a perfect accompaniment to your holiday meal. The key to this recipe is sautéed veggies. By sautéing the leeks, butternut squash, kale, and Italian sausage before baking, you’re not only starting the cooking process for the veggies and meat, but you are also bringing out all the lovely flavors, which will make this dressing deliciously flavorful.

Heat oven

Preheat the oven to 350 °F and butter a 3-quart casserole dish..

Cook sausage

In a large Dutch oven or heavy pot over medium heat, melt 1 tablespoon butter and add 1 pound sweet Italian fennel sausage. Cook until golden brown, about 6 minutes.

Add leek and squash

Add 3 sliced leeks and ½ diced squash. Season with 1 teaspoon each salt and black pepper and cook until the leeks are soft, about 3 minutes.

Add kale

Add 1 bunch of kale and toss. Cover and cook until the kale wilts, about 4 minutes.

Add focaccia and butter

Add 1 pound stale focaccia cubes and the remaining 3 tablespoons butter and toss. Cook, stirring, until the butter melts.

Mix chicken broth and egg

In a bowl, whisk 1 egg and 2 cups chicken broth until smooth. Stir in 1 cup diced Parmesan and 1 teaspoon salt.

Add broth mixture

Add the broth mixture to the bread mixture and cook for about 1 minute until the liquid is absorbed by the bread.

Transfer dressing to casserole dish

Transfer to the prepared casserole dish and scatter ÂĽ cup shredded Parmesan cheese evenly on top.

Bake for about 40 minutes until golden and cooked through.

Set aside for 5 minutes before serving alongside your Thanksgiving turkey.
