These Sesame-Ginger Green Beans are totally delicious. Not only are they coated in a lovely sesame oil dressing and roasted in the oven, but they are also served with sesame seeds. I love this way of livening up green beans.

To make these beans, start by frying shallots until golden brown. Drain on a paper-towel-lined plate. Toss green beans with olive oil, sesame oil, ginger, and salt on a rimmed baking sheet. Cook in the oven until tender but still green and transfer to a serving dish. Toss with sesame seeds and serve garnished with shallots.

Heat oven

Preheat your oven to 400 °F.

Cook shallots

Heat 1 cup of vegetable oil in a small pan over medium-high heat. Add 3 small sliced shallots and cook for 12 - 15 minutes while stirring occasionally. Once golden brown, transfer to a plate lined with paper towels to drain.

Toss green beans with oil, ginger and salt

Toss green beans with 1 tablespoon each of olive oil, sesame oil and ginger on a rimmed baking sheet. Season with 1 teaspoon of salt.

Roast beans

Place the baking sheet in the oven and roast for 5 - 8 minutes until the beans are tender, but still green.

Serve

Transfer the roasted beans to a serving dish and toss with 2 tablespoons of sesame seeds. Serve garnished with the reserved shallots.
