Tomato Green Bean Soup


Easy and delicious, this one-pot Tomato Green Bean Soup comes together without much fuss and uses simple ingredients. Fresh green beans, ripe tomatoes, carrots, onions, garlic, and fresh basil combine to create a fragrant bowl of soup that is both brothy and satisfying. Start out by sautéing the onions and carrots in some butter, then add the garlic and green beans. Cook until the garlic is fragrant and the beans are bright green. Next, add the chicken broth. If you want to keep the recipe vegetarian, substitute vegetable broth for the chicken broth. Let simmer until the beans are tender, about 20 minutes. Finally, stir in the tomatoes. Steps to make Tomato Green Bean Soup


Saute onions and carrots


In a large Dutch oven or soup pot, melt 2 teaspoons butter. Add 1 cup chopped onions and 1 cup chopped carrots and cook, stirring occasionally, for 5 minutes.


Add green beans and garlic


Stir in 1 pound chopped fresh green beans and 1 minced garlic clove and cook, stirring, for about 2 minutes.


Add chicken stock


Add 6 cups chicken stock and bring to a boil. Reduce heat to a simmer and cook for about 20 minutes or until the beans are tender.


Add tomatoes, basil and seasoning


Stir in 3 cups diced tomatoes, ¼ cup minced fresh basil, ½ teaspoon salt, and ¼ teaspoon black pepper. Bring back to a simmer and cook for another 5 minutes.



Serve with crusty bread, a simple sandwich or an easy salad. Enjoy!
