The main trick to the dish is not to rush toasting the almonds. It takes time until the butter has browned and the almonds are just beginning to brown. The recipe needs some patience and stirring, but you will be rewarded with an amazingly flavorful dish. A splash of lemon juice enlivens delicate haricots verts, highlighted with nutty almonds. Start by toasting the almonds in butter. Add shallots, followed by lemon juice with a splash of water. Cook until the flavorful sauce has thickened and then set aside. Next, cook the green beans until tender. Finally, toss the green beans with almond mixture and season with salt and a grind or two of fresh black pepper. Store the leftover green beans (if any!), well covered, in the refrigerator for up to 4 days.

In a large skillet over medium-low heat, melt 2 tablespoons butter and add ½ cup sliced almonds. Cook, stirring constantly, until the butter has browned and the almonds are starting to brown, about 7 to 8 minutes.

Add shallots

Add ¼ cup thinly sliced shallots and cook, stirring constantly, for 1 minute.

Add lemon juice and water

Stir in 2 teaspoons lemon juice and 1 tablespoon water. Cook, constantly stirring, until the liquid has thickened, about 1 minute.

Set almond mixture aside

Scoop the almond mixture into a bowl and set aside.

Return the empty skillet to the stovetop, and add 1 pound haricots verts, ½ cup water, and ½ teaspoon fine salt. Cook covered over medium heat, stirring occasionally, until the beans are almost tender, about 9 to 10 minutes.

Uncover and continue cooking

Uncover the skillet and cook over medium-high heat until the liquid has evaporated, about 2-4 minutes.

Add almond mixture and seasoning

Remove from the heat and add the reserved almond mixture. Toss to combine and adjust salt and pepper to taste.
