Ingredients

2 (6-ounce) Chicken Breast skinless, boneless
1 cup (8 ounces) Potatoes small Yukon Gold or red potatoes, halved or quartered
2 Carrots large, sliced into rounds
2 cups Broccoli florets
1 Red bell pepper cut into chunks
1 cup Cauliflower florets
2 tbsp Olive oil
Salt to taste
Black pepper to taste
For the Sauce:
¼ cup Hoisin sauce
⅓ cup Soy sauce reduced sodium soy sauce can substitute with gluten free tamari or coconut aminos for paleo-friendly version
1 tbsp Honey or substitute with coconut sugar
1 tbsp Rice wine vinegar
2 tsp Sesame oil
2 cloves Garlic minced
½ tsp Ginger grated or minced
½ tbsp Cornstarch

    A great dinner for the family to enjoy too. A hearty dish made with chicken chunks, potatoes, carrots, broccoli, bell peppers and cauliflower to fill the gap and simmered in a homemade hoisin sauce. This sweet and sour favorite is best served with white basmati rice.

    Steps to make Sheet Pan Hoisin Chicken

    Preheat oven and prepare baking pan

    Preheat oven to 400 °F and grease a large nonstick baking pan with oil or line with baking parchment paper or aluminum foil.

    Prepare sauce

    In a mixing bowl, mix soya sauce, hoisin sauce, honey, sesame oil, ginger, garlic and cornstarch until combined. Set aside to use later.

    Prepare chicken and potatoes

    Spread out the chicken and potatoes in a single layer on the base of the prepared pan. Generously season everything with salt, black pepper and drizzles of olive oil and toss to coat well.

    Bake in preheated oven for 15 minutes.

    Turn chicken and add carrots, broccoli, bell peppers and cauliflower to the pan.

    Drizzle with more olive oil and prepared sauce. Toss to coat evenly.

    Bake for another 15-20 minutes until chicken is cooked to your preferred doneness.
