I love to make this Simple Potato Cake with Onions as it is one of my favorite comfort foods. I love recipes that are as simple as this one – it allows the humble ingredients to shine through. I love to serve this alongside meat or fish or a crisp garden salad for a lighter meal.

Place thinly sliced potatoes in a bowl and add onions, butter, dried herbs, salt and pepper. Mix everything together and transfer the potato mixture to a springform pan. Spread it out evenly and bake in the oven for about 50-55 minutes until the potatoes are cooked through and golden brown. Delicious!
