6 slices Bacon chopped
½ Onion medium chopped
¼ cup Apple cider vinegar
¼ cup Maple syrup
¼ tsp or about 1 Garlic clove minced
½ tsp Fresh thyme removed from stem and chopped

This Warm Maple Bacon Potato Salad is an all-time favorite of mine. Crisp roast potatoes with an amazing vinaigrette made from sweet maple syrup, tangy apple cider vinegar, and flavorful garlic.

This salad is simple to make too. Start by roasting potatoes. To make the vinaigrette, start by cooking bacon until crisp. Place cooked bacon on a paper towel to soak up the grease. Reserve some of the bacon grease and saute onion. Add the vinegar, syrup, garlic, thyme, and half of the bacon and simmer. Set the vinaigrette aside until potatoes are cooked. Once the potatoes are cooked, toss well with vinaigrette and garnish using the reserved bacon and additional thyme if desired. Serve warm.

Steps to make Warm Maple Bacon Potato Salad

Preheat oven

Heat the oven to 400 °F.

Prepare potatoes

Quarter 1 ½ pounds of potatoes and place on a rimmed baking sheet. Drizzle the potatoes with 2 tablespoons of canola oil and sprinkle evenly with salt. Toss to ensure potatoes are coated evenly.

Bake potatoes

Bake the potatoes in the oven for 25-30 minutes or until tender, turning half way.

Cook bacon

Cook 6 slices of chopped bacon on medium-high heat until browned and crisp. Remove the bacon from the pan with a slotted spoon and place on a paper towel to soak up excess grease. Drain all but 1 tablespoon of grease from the pan.

Saute onion

Saute half a medium onion in the reserved bacon grease until soft.

Make vinaigrette

Add ¼ cup of apple cider vinegar, ¼ cup of pure maple syrup, ¼ teaspoon of minced garlic, ½ a teaspoon of fresh thyme, and half of the crisped bacon. Simmer over medium heat for 5-10 minutes, until slightly reduced.

Dress potatoes

Once the potatoes are cooked, toss with the vinaigrette.

Garnish

Garnish with the remaining crispy bacon and additional thyme.

Serve warm.
