Spaghetti Con Broccoli

This Spaghetti Con Broccoli recipe is one of my favorite midweek meals. How often can you get a healthy, delicious and nutritious meal on the table in under 30 minutes? It contains one of my favorite superfoods too – broccoli. Broccoli is such an amazing veggie. It is low in calories but contains loads of nutrients and antioxidants that are great for your body. 

Start by cooking the spaghetti and broccoli in a large pan of boiling water. As the pasta is cooking, sauté mushrooms and garlic in a skillet. Add cream and bring to a simmer before stirring in the spaghetti and broccoli. Finish the dish by stirring through Parmesan cheese. Delicious!

    Cook pasta

    Step 1 - Spaghetti Con Broccoli

    Bring 4-6 quarts of water to a boil in a large saucepan with 1 tablespoon of salt. Cook 1 pound of spaghetti in the water for 7 minutes.

    Add broccoli

    Add ½ pound of broccoli florets and cook for 2-3 more minutes until the spaghetti is al dente and the broccoli is crisp-tender.

    Reserve cooking water

    Reserve 1 cup of the pasta cooking water. Drain the spaghetti and broccoli.

    Sauté mushrooms

    Place ¼ cup of butter in a large deep skillet and melt. Sauté 8 ounces of sliced mushrooms for 4 minutes over medium heat.

    Add 2 minced cloves of garlic and cook for another 30 seconds.

    Pour in 3 cups of cream, 1 ½ teaspoons of salt and ¾ teaspoon of pepper. Bring the sauce to a simmer. Simmer, while stirring occasionally for 4 minutes over medium heat until the sauce is slightly thickened.

    Stir in spaghetti and broccoli

    Stir in the cooked spaghetti and broccoli. Pour in ¼ cup of the reserved pasta water. Cook while stirring for 1 minute until all the spaghetti is coated with the sauce.

    Mix cheese with the pasta

    Stir ½ a cup of Parmigiano-Reggiano cheese into the pasta and remove the pan from the heat.

30 Minutes wasn't enough for the pasta, could be that my stove just sucks. It ended up being too hard and I had to re-do it. But still a good recipe once I got the timing right. I would recommend the Harissa spaghetti instead though.
