Healthy Makeover Meatloaf recipe

This Healthy Makeover Meatloaf is exactly what the name suggests: a healthy take on traditional meatloaf. Meatloaf is one of those classic dishes that kids love. It is made of ground meat which is mixed with a variety of other ingredients. It gets its name because it is formed into the shape of a loaf before cooking in the oven. Cooked meatloaf can be sliced just like bread to make individual portions.

To make this meatloaf, start by sautéing onion, celery and garlic. Place the cooked veggies in a bowl and add turkey, bread crumbs, milk, Worcestershire sauce, egg whites and ketchup. Season with salt and pepper and mix together using your hands. Shape the meatloaf mixture into a loaf and bake in the oven. To serve, allow to cool slightly before slicing into individual servings.

Steps to make Healthy Makeover Meatloaf

    Preheat the oven to 350 °F.

    Sauté celery and onion

    Heat 1 tablespoon of olive oil in a nonstick skillet. Add 2 chopped stalks of celery and 1 small chopped onion to the skillet and sauté on medium for about 10 minutes, stirring occasionally or until the vegetables are tender.

    Add garlic

    Add 1 clove of chopped garlic and sauté for 1 more minute. Transfer the sautéd vegetables to a large bowl and allow to cool slightly.

    Make meatloaf mixture

    Add 2 pounds of turkey, ¾ cup of bread crumbs, 1 cup of milk, 1 tablespoon of Worcestershire sauce, 2 egg whites, ¼ cup ketchup, ½ teaspoon salt and ¼ teaspoon of coarsely ground black pepper to the vegetables. Mix all the ingredients together with your hands until the mixture is well combined (but not overmixed).

    Shape the meatloaf

    Shape the meatloaf mixture into a 9 x 5 inch loaf in a 13 x 9 inch metal baking pan.

    Brush with ketchup and mustard

    Mix the remaining ¼ cup of ketchup with 1 tablespoon of Dijon mustard and brush this mixture over the top of the loaf.

    Cook in the preheated oven for 55 - 60 minutes (a meat thermometer inserted in the center of the meatloaf should read 160 °F).

    Allow the meatloaf stand for about 10 minutes before removing from pan. This will give the juices time to set and will allow for easier slicing.

    Transfer the meatloaf to a serving platter. Cut into even slices before serving.
