Ingredients

3 ounces Spaghetti uncooked and broken into 1 inch pieces
½ pound Chicken Breast skinless, boneless, halves, cut into cubes
4 cups Chicken broth
1 can Condensed Tomato Soup
2 tbsp Vegetable oil
1 medium Onion chopped
1 large Carrots chopped
1 stalk Celery finely chopped
2 garlic Cloves minced
2 tbsp Parsley chopped fresh (optional)
1 cup Water

I created this Spaghetti Soup recipe especially for my children. They love the chicken and noodles in the tomato soup mix and I love knowing that they’re eating their vegetables of carrots and celery too.

It’s a great dinner for during the week, and you can boil up a big pot and refrigerate it for the busier evenings when you’re not able to cook. Nothing needs to be added, however, if you choose, sprinkling parsley over the top gives the soup that extra special, finishing touch.

Steps to make Spaghetti Soup

Cook chicken

In a sauce pot, over medium-high heat. Add the chicken and cook until browned, stirring often. Remove the chicken.

Add vegetables

Stir in the remaining oil and heat over medium heat. Add the onion and cook for 1 minute. Add the carrots and cook for another 1 minute. Add the celery and garlic and cook for a further 1 minute.

Add broth and water

Stir in the broth, soup mix and water. Heat to a boil.

Add pasta

Stir in the pasta. Cook according to the package instructions for about 10 minutes, until the pasta is al dente.

Add chicken

Add the chicken and heat through.

Add the parsley, if desired, and serve!
