1 tbsp Olive oil extra virgin
1 tbsp Butter
1 large Carrots peeled and sliced
1 stalk Celery sliced
1 Shallots or ½ small onion, chopped

    In a large soup pot over medium heat, heat 1 tablespoon butter and 1 tablespoon olive oil and add the carrots, celery and shallot. Season the mix with salt and pepper and sauté for 10 minutes until softened.
