Ingredients

2 tbsp Olive oil extra virgin
1 large Onion diced
3 cloves Garlic minced
3 medium Carrots diced
3 stalks Celery diced
2 medium Potatoes peeled and diced
2 tsp Dried Italian seasoning
4 cups Vegetable broth
1 cup Water
2–15oz can Diced tomatoes
1 cup Corn
1 (15 oz can) Can kidney beans drained and rinsed (optional)
1 bay Bay leaf
Âź cup Parsley chopped
1 tbsp Lemon juice freshly squeezed , more to taste
1½ tsp Kosher Salt or more to taste
Black pepper freshly ground

Steps to make The Yummiest Vegetable Soup

Cook onions and garlic

In a large Dutch oven over medium-low heat, heat oil and add onion, garlic and a teaspoon of salt. Cook for about 8 minutes.

Add hard veg

Add carrots, celery, potatoes and cook for 5 minutes, stirring a couple times during the cook.

Season

Add Italian seasoning spice and cook for another minute.

Add remaining ingredients

Add broth, water, tomatoes, corn, beans, bay leaf, and a few sprinkles of ground pepper.

Cook soup

Bring everything to a boil then reduce heat to low and cover pot with lid. Simmer on low heat for about 35 minutes until vegetables are soft.

Add parsley and lemon juice

Once veg have softened, remove from heat and add parsley and lemon juice. Stir through to combine.

Season

Remove bay leaf bits and season with salt and pepper to suit your tastes.

Serve

Serve hot and enjoy!
