This Vegan Broccoli Basil Potato Soup is a delicious, healthy, and nutritious soup that is jam-packed with flavor thanks to the addition of fresh fragrant basil. Top tip: save some of the pretty leaves to garnish the soup before serving!

This soup is very easy to make too. Begin by sauteing chopped onion, potato, and celery until the vegetables start to look translucent. Add broccoli, chopped stem, garlic, and stock to the pan. Bring the mixture to a boil. Reduce heat and simmer until the vegetables are just cooked through. Add most of the basil leaves and stalks to the soup. Blend until really smooth and return the soup to the empty pan to reheat. Check the seasoning and serve garnished with reserved basil leaves.

Steps to make Vegan Broccoli Basil Potato Soup

Prepare onion, potato, and celery

Chop the onion in half through the root and remove the brown skin from both halves. Roughly chop the onion. Peel and roughly chop the potato and roughly chop the celery stalks.

Saute vegetables

Heat 2 tablespoons of oil in a large saucepan over low to medium heat. Saute the chopped onion, potato, and celery for 5-10 minutes until the vegetables start to look translucent.

Add broccoli, garlic, and stock

Cut the broccoli florets off the stem and cut any large florets in half. Chop the stem into small pieces. Add the florets, stem, 2 chopped garlic cloves, and 2 ¼ pints of stock to the saucepan.

Boil and simmer

Bring the soup mixture to the boil. Turn down the heat and simmer for 10 minutes until the vegetables are just cooked through.

Blend

Add most of the basil and the stalks to the soup. Take the saucepan off the heat and blend the soup in a blender or using a stick blender until completely smooth. Return soup to the saucepan and heat. Check and adjust seasoning.

Serve

Serve the soup in six individual bowls. Drizzle some olive oil over each of the bowls and garnish with reserved basil leaves. Serve with crusty bread.
