This soup is very easy to make too. Begin by sauteing chopped onion, potato, and celery until the vegetables start to look translucent. Add broccoli, chopped stem, garlic, and stock to the pan. Bring the mixture to a boil. Reduce heat and simmer until the vegetables are just cooked through. Add most of the basil leaves and stalks to the soup. Blend until really smooth and return the soup to the empty pan to reheat. Check the seasoning and serve garnished with reserved basil leaves.
