These Bacon Breakfast Bowls combine three of my favorite breakfast foods: bacon, eggs and cheese! They are really quick and easy to make. They taste delicious and are really filling too. Sometimes I make a double batch at the weekend and put some of them in the freezer to have for quick breakfasts during the week. I take them out of the freezer the night before. This recipe is also very versatile.

Got some leftover herbs, chilies or mushrooms in your fridge? Just chop them finely and add them to the egg mix at stage 5 below. Substitute the cheddar for other cheese if you prefer. Use your imagination and get creative! If you make these Bacon Breakfast Bowls, don’t be surprised if they become a regular feature in your weekend kitchen!

Steps to make Keto Bacon Breakfast Bowls

Heat the oven and prepare a muffin tray

Preheat the oven to 350°F. Lightly grease a 6 cup muffin tray.

Cook the bacon

In a large skillet, fry the bacon over a medium-high heat. Turn occasionally to ensure even cooking.

Remove the bacon and drain

When the bacon is evenly browned, but not crispy, remove from the skillet and drain any excess oil on paper towels.

Place the bacon in the muffin tray

Line each muffin cup with a strip of bacon.

Combine the eggs, salt and pepper

In a separate bowl, mix together the eggs, salt and pepper.

Add the eggs

Spoon the egg mix into muffin cups until they are about 3/4-full.

Top with cheese

Sprinkle the grated cheddar cheese on top of each muffin.

Bake for 20-35 minutes. When the bacon breakfast bowls are cooked, they should be golden brown on top and the egg won’t wobble when you shake the tray.

Take the bacon breakfast bowls out of the oven and remove from the muffin tray immediately to ensure they don’t stick.

These breakfast bacon bowls can be served hot or cold.
