Every bite of these chicken roll-ups has Italian flavors that are melt-in-your-mouth delicious. Quick and simple to prepare, this recipe is easy enough for a weeknight and fancy enough to serve at a dinner party.

The recipe serves four, but it can easily be doubled or tripled for more guests. Start by mixing together a knob of softened butter and fresh parsley in a small bowl and mixing together the breadcrumbs and grated Parmesan in a shallow dish. Next, use a meat mallet to pound the chicken thin. Once the chicken is prepped, season it with salt. If using prosciutto instead of cooked ham, it is better not to add any salt since prosciutto is already salty enough. Spread each slice of chicken with butter parsley mixture, top with ham or prosciutto and a slice of cheese, then roll up and secure with a toothpick. Finally, toss the chicken roll-ups in breadcrumb mixture to coat and place on a baking dish. Top the chicken roll-ups with any leftover breadcrumb mixture and sprinkle with a pinch of salt. Drizzle with some olive oil or a little butter. Bake the stuffed roll-ups for about 30 minutes or until an instant-read thermometer reads 165 °F. Serve immediately and enjoy!

Preheat oven

Preheat the oven to 350 °F and lightly grease a 9-inch baking dish.

Combine butter and parsley

In a small bowl, mix together 1 tablespoon softened butter and 1 tablespoon finely chopped fresh Italian parsley. Set aside.

Combine breadcrumbs and Parmesan

In a small dish, mix together 2-3 tablespoons breadcrumbs and 1 tablespoon freshly grated Parmesan cheese. Set aside.

Pound chicken

Use a meat mallet to pound out 4 slices of chicken.

Stuff chicken

Lay the chicken slices flat and sprinkle with salt (only if using the cooked ham and not the prosciutto). Spread each slice of chicken with butter mixture, top with 1 slice of ham or prosciutto and 1 or 2 slices of cheese.

Roll up the chicken slices and fix with a toothpick.
