It all comes together in a blender or a food processor in less than 5 minutes. The second is using oat flour instead of regular flour. Oat flour has a pleasant nutty flavor and is naturally gluten-free. Making oat flour is super easy. Just pulse the oats in your blender into a fine powder, and you are good to go. And if you’re new to gluten-free baking, this easy recipe is a great place to start.

Once you have the oat flour, you add all the dry ingredients and process to combine. Then add in the wet ingredients and pulse a few times to combine. Don’t overmix! Stop as soon as all the ingredients are incorporated without any lumps. Finally, stir in most of the chocolate chips, reserving some for topping.     Preheat oven and prepare baking pan

    Preheat the oven to 350 ºF. Grease an 8x8-inch baking pan with non-stick cooking spray. Alternatively, line with parchment paper. Set aside.

    Pulse oats

    Place ¾ cups rolled oats in a high-powered blender or a food processor. Pulse the oats into a fine powder, about 30 seconds to 1 minute.

    Add cocoa powder, sugar, baking soda and salt

    To the oat flour, add ¾ cup unsweetened cocoa powder, ¾ cup granulated sugar, ½ teaspoon baking soda, and ¼ teaspoon salt and process to combine.

    Add the melted and cooled ½ cup butter, ½ cup creamy peanut butter, 2 large eggs, 2 tablespoons water, and 1 teaspoon vanilla extract. Process to combine well.
