This Dairy Free Vanilla Ice Cream is a delicious vegan recipe that is easy to whip up in minutes using your ice cream maker. The base is made with just three ingredients: coconut milk, sweetener, and pure vanilla extract or real vanilla bean scrapings. It is super creamy, requires zero eggs, and has no fillers or extras added.

For this recipe, I use zero-calorie powdered sugar replacement. I love the taste of the Swerve sweetener, and it works really well in my ketogenic recipes, but feel free to experiment and use another favorite sweetener of your choice. To make the ice cream, pour the coconut milk into a large bowl and add the sweetener to taste and vanilla for flavor. Whisk to combine and transfer to your ice cream maker to freeze. And done, you now have vanilla ice cream. Serve immediately for soft-serve ice cream or freeze until just solid and scoopable.
